This Low Carb Hamburg Casserole is a quick and easy meal to put together. This recipe was created by Diana Keuilian but she uses sweet potato, so I used cauliflower in its place. Mind you, I like both of them but I wanted my carb count to be lower so cauliflower was my choice for this recipe. Its crazy to add the sweet pickles on top it gives it that little bit of sweetness which makes this recipe perfect.
Cauliflower Spice
1 tablespoon dried parsley
2 teaspoon smoked paprika
1 teaspoon coconut sugar
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
Ground Beef Mixture
1 lb lean ground beef
1/2 cup yellow onion
1/2 cup low sugar ketchup
1/4 cup mustard
1/4 teaspoon sea salt
1/4 teaspoon black pepper
Topping
1/4 cup sweet pickles
1/4 cup diced tomatoes
Instructions
Preheat oven 450 F
Shred cauliflower with a food processor
Combine parsley, paprika, sugar, garlic powder and pepper together, add to the shredded
cauliflower and mix well. Set aside.
Place ground beef in a bowl, add onion, salt, pepper, ketchup, mustard and mix well.
Place pieces of ground beef mixture in the bottom of a oven ware dish ( don’t press it down leave in
clumps)
Place cauliflower mixture on top of ground beef, cover with foil and bake on middle rack in the oven
bake for 25 to 30 minutes, remove foil and broil top until it is golden brown.
Remove from oven, sprinkle top with tomatoes and pickles and serve.
