Well, I had a few packages of frozen cauliflower in my freezer and thought it was time for me to pull out a bag out and make something with it. So the recipe this week is Low Carb Ham and Cauliflower Casserole. I put up the video on youtube last week and finally on my blog today.
I found the cauliflower quite stinky when I set it aside to thaw out but when it came to comparing the flavor between using frozen to fresh in this recipe I did not see much of a difference. So if you have frozen cauliflower, give it a try in this recipe.
So lets get started and I will show you how to make it!
1 cauliflower
4 oz cream cheese
3/4 cup sour cream 14%
2 tablespoons shredded Parmesan Cheese
1/4 cup chopped onion
pepper to taste
3/4 cup grated cheddar cheese
2 cups cubed ham
If you are using frozen cauliflower, make sure the florets are cut into small pieces and let them thaw. Place in a calendar to drain excess water.
If you are using fresh cauliflower, cut them into small pieces and put them in a steamer or boiling water until cooked. Set aside.
You want to have room temperature cream cheese, you can put it in the microwave or even on the top of the oven vent where the heat comes out of the oven to soften up the cream cheese.
In a bowl add cream cheese and sour cream, mix until smooth, add Parmesan, onions and ham, sprinkle with pepper and mix well.
Place in oven ware dish and back at 350 for approximately 45 minutes.
If you see the casserole bubbling around the outside and center then the Low Carb Ham and Cauliflower Casserole is almost ready to serve.
Let it sit for 10 minutes to set, then you are ready to serve.
