Bored with steamed vegetables? Jazz up your standard side with this tasty low carb green bean recipe.
The presentation for fresh green beans is so pretty, it could serve as the centerpiece for you dinner table! Just the presentation itself will make you want to eat them.
Tip: You could use yellow summer squash in place of zucchini
Fresh green beans (enough to make 6 bundles with 8 beans in each bundle)
1 zucchini
1 garlic clove, minced
¼ tsp dried tarragon, crushed
4 teaspoons olive oil
¼ tsp salt
1/tsp coarsely ground pepper
1. Trim stem end from beans and arrange in 6 bundles.
2. Using a peeler, peel strips of zucchini to make alternate colors ( white and green).
3. Cut zucchini into 1 inch pieces.
4. Place beans through zucchini rings.
5. Place bean bundles in a steamer cover and steam 8-10 minutes or until crisp-tender.
6. While steaming, add oil, garlic and tarragon in a pan, sauté for 1 minute.
7. Remove from heat.
8. Arrange bean bundles on a platter, drizzle with garlic mixture.
9. Sprinkle with salt and pepper.
Makes 6 servings
