Low Carb Garlic Parmesan, Halloom Hassle Back Zucchini


What a great side dish, you can cook it in the oven or on the Barbecue. Hassle back zucchini is a simple but gourmet looking dish. So much healthier then slapping a potato as a side dish. This tasty side dish will impress your guest or family , the Parmesan mixture is absolutely delicious, I love it. I served it with BBQ pork chops tonight and it was a hit. Very versatile you can serve them with anything.

Hassell back Zucchini

IMG_58371/2 teaspoon dried oregano

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon pepper

1/3 cup Parmesan cheese

3 small zucchini

approximately 70 grams halloom cheese

Preheat grill to medium high heat 450F

Combine oil, oregano, garlic,salt,pepper and parmesan cheese in separate bowl

Hassle back your zucchini by taking a knife and slicing the zucchini almost through slicing every 1/2 inch so you can separate each piece and it can be fanned out.

Thinly slice the halloom cheese and insert a piece between each slice.

Base the zucchini with olive oil and sprinkle the Parmesan mixture on the top of each zucchini.

Place zucchini on a double sheet of foil and place on BBQ with the lid closed for approx 16 to 20 minutes
