Focaccia is a flat baked Italian Bread; this bread can be 35 carbs per slice if you make it the traditional way with flour and sugar. Well this low carb Focaccia Bread is a measly 5 net carbs per slice if you follow this recipe. It is not exactly the same as the standard recipe but I think you will enjoy this one. It can be laid out thinly on a pizza pan and it would make a wonderful pizza crust, or top the bread with some of your favorite toppings such as black olives, shredded cheese. (Many things to choose from)
4 large eggs
8 ounces mascarpone cheese or other
soft cheese
1 cup (70 grams) pork rind flour
1 cup grated Parmesan cheese
1teaspoon baking powder
1cup mozzarella cheese, shredded
¼ teaspoon salt
¼ teaspoon pepper
1teaspoon Italian seasoning
2 tbs melted butter with 1 crushed glove of garlic
Preheat oven to 425 degrees.
Have your eggs and mascarpone cheese at room
temperature.
Using a food processor, blend the pork rinds until they
become a fine flour.
You can also crush the pork rinds in a large zip-lock bag
In a large mixing bowl, combine eggs and mascarpone
Cheese. Blend with electric mixer until smooth.
In a separate bowl, combine pork rind flour, baking
powder, salt, pepper, seasoning, and shredded cheeses.
Add dry mixture to egg mixture and mix thoroughly.
Brush coconut oil onto a pizza pan or baking sheet.
Spread mixture evenly onto oiled pan.
Bake for 15 minutes.
Remove from oven and brush butter and garlic.
Return pan to oven and bake for another 3-4 minutes,
or until golden brown on top.
