This is an awesome twist on the traditional meat loaf! This Low Carb Mexican Flavored Meatloaf is a nice change. It is great to use your imagination to create different meals so you’re not eating the same thing over and over again. I used 2 pounds of meat in this recipe but if you use less meat and still use all the ingredients in this recipe you will have an even more of an amazing flavored meatloaf.
If you any left overs it can always be frozen!
2 lbs ground beef (use less meat and still follow same recipe to have stronger flavor)
½ cup pork rinds (FritoLay, Baken-ets)
1 small chopped onion
2 eggs
2 tsp chili powder
2 tsp cumin
½ tsp pepper
½ cup salsa (mild, medium or hot, your choice)
½ cup shredded cheese (any kind)
227 grams sliced mushrooms (8 ounces)
Topping
¼ cup salsa (mild, medium or hot, your choice)
1 cup shredded cheese
Preheat oven to 350 F
In a bowl mix ground meat, pork rinds, eggs, chili powder, cumin, pepper, onion, salsa, ½ cup cheese and mushrooms together.
Once mixed well place mixture on a cookie sheet and shape into a half ball.
Spread ¼ cup of salsa on the top of the meatloaf.
Bake for approximately 75 minutes. (it depends on how many pounds you are using)
Remove meatloaf from oven, sprinkle 1 cup of shredded cheese on top of meatloaf, place back in oven until the cheese is melted.
Remove from oven and serve.
