I have made this *Low Carb Dreamy *Pumpkin Dessert many a time. One of the steps of preparing this dessert is to boil my water in the kettle and use the water as a bath to bake this Dreamy Pumpkin Dessert in. This time, Crackkkk!! broke one of the dishes.
Take 2! The next time I used tap water and was successful, they still baked evenly. (It will save on buying more dishes.)
Makes 8, ½ cup servings
1 ½ C Pumpkin can or fresh
¼ C Stevia or (½ C Truvia)
½ tsp salt
1 tsp ginger
1 tsp cinnamon
1/3 tsp nutmeg
½ tsp cloves (optional)
3 eggs
2 C Natur-a Organic Unsweetened Soy Beverage (comes in a carton)
Combine pumpkin, sweetner, salt and spices.
Add eggs and Natur-a Organic Unsweetened Soy Beverage(can be found in the bakery isle) , blend thoroughly. Pour into dishes, place on cookie sheet add water in pan.
Place on middle rack. Bake:350 F for 45 minutes, if toothpick comes out clear they are done.
Top with: 1 Tb Cool Whip
Yield: 4.04 carbs per serving, 5 carbs if you add Cool Whip
