Here’s a quick little pot of soup that may come in handy this week! It’s full of healthy ingredients, creamy, and oh so tasty. It will take 30 minutes to steam the cauliflower and only about 10 minutes to prep the ingredients for this comforting soup. Curry flavors and cauliflower always make a good match. This soup is perfect for a light lunch, or as a side with dinner. I’ve even eaten it for breakfast its such a healthy way to start the day! You’re going to love this easy recipe.
INGREDIENTS:
2 tablespoon Oil (Avocado)
1 medium (120 grams) Onion, diced
1 tablespoon Curry Powder
1 teaspoon of Herbamare Spice or salt and pepper
1 medium (741 grams) Cauliflower
1 cup (250 grams) Unsweetened Coconut Milk
1 cup (250 grams) 35% Whipping Cream
2 cups (500 grams) Chicken Broth
Dash of Lemon Juice
If you have a steamer, place the full cauliflower in the steamer and steam for 30 minutes.
In a large deep saucepan, add the oil and the onion. Fry until onion is transparent,
Add the curry powder, mix well.
Add the coconut milk, cream and chicken broth, let simmer.
Remove the cauliflower from the steamer and cut into pieces and add to the liquid in the pot.
Let simmer and make sure the cauliflower is soft.
Using an immersion blender or food processor, blend until the soup is smooth.
Taste and if it needs more Herbamare just add to the soup!
