Thinly sliced cucumbers and onion are tossed in a sweet and tangy vinaigrette for a classic side dish.
This easy Low Carb Cucumber Salad recipe is a family favorite recipe that people have been enjoying for years, were as for me I hated cucumbers. While we were away my girlfriend was always putting small pieces of cucumbers in our salad and little by little I was getting accustom to its flavor.
My husband loves cucumbers so I thought I would try and make a Low Carb Cucumber Salad that had a bit of tang and slight sweetness, thinking that the sweetness would help me to enjoy this salad.
By surprise I quite enjoyed this recipe and will be adding this Low Carb Cucumber Salad into my regular rotation of meals.
So lets get started and I will show you how to make it!
2 cups (300 grams) seedless cucumbers
1/2 cup (75 grams) chopped red onions
2 tablespoon fresh lemon juice
2 tablespoon Braggs liquid amino ( or Tamari)
4 tablespoons apple cider vinegar
Approximately 10 drops of liquid stevia
Sprinkle of Cajun spice
Slice cucumber into thin slices ( skin on)
Chop onion into small pieces
Sprinkle of Cajun Spice
Instructions
In a bowl mix all the wet ingredients, add the cucumbers and onion, stir and mix well.
Sprinkle Cajun spice to your liking.
Store in fridge for 15 minutes and then serve.
I found the cucumber gets soggy the next day, so try and make the right amount for your family, so you don’t have leftovers.
