I feel like I just got finished eating in one of the most expensive Italian Restaurants. I prepared this delicious Low Carb Creamy Tuscan Chicken and I am not kidding, you it is fabulous:). I served it over a bed of zucchini noodles and OMG I can’t get enough of it.
This is one of the easiest meals to prepare and would not hesitate to serve to my guests. This recipe can be served with a salad or vegetable but I quite liked it over my zucchini noodles.
So lets get started and I will show you how to make it!
1 1/2 pounds of skinless, boneless chicken breast
Herbamare or salt and pepper
Sauce
1 cup whipping cream (heavy)
1/2 cup chicken broth
1 teaspoon garlic powder
1 teaspoon Italian Spice (recipe below to make)
1 cup Parmesan cheese
1/2 cup sun dried tomato pesto or sun dried tomatoes
1 cup chopped spinach
zucchini noodles (optional)
Italian Spice
1 1/2 teaspoons dried oregano
1 teaspoon dried marjoram
1 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
1/2 teaspoon dried sage
Cook fresh or frozen chicken in a skillet sprinkled with herbamare or salt and pepper, set aside.
In a skillet add cream, broth, garlic, Italian seasoning, cheese and sun-dried tomato pesto, stir
cook until thickened.
Stir in spinach leaves.
Add cooked chicken , cover with sauce and serve when chicken is heated through.
