This Low Carb Creamy broccoli Soup is one of the fastest and easiest recipe to make. The flavor could easily be served in a fine restaurant. I just pour the soup into missionary jars and put in the fridge until ready to eat up and serve. I find I eat more soup in the cooler weather and wanted to share some of my favorite ones with you. You could also buy frozen broccili and use instead of fresh.
5 Tablespoons butter
1/2 teaspoon salt
2 gloves minced garlic
2 stocks of finely chopped celery
1 small onion chopped
4 cups chicken broth
4 cups chopped broccoli
2 cups whipping cream
1/2 teaspoon guar gum
dash pepper
Saute onion, garlic and celery in butter until soft
Add broth, broccoli, cover and simmer for 10 minutes
Place in a food processor and blend until totally smooth
Return soup to pot and add guar gum ( sprinkle little by little and whisk until dissolved)
Season with pepper
Servings : 6
Yield: 5.2 net carbs
