Try this Low Carb Creamy Asparagus Soup it is pure comfort in a bowl.
So lets get started and I will show you how to make it.
2 Tbsp. butter
1 large onion, chopped
1 large garlic clove, minced
1-1/2 lb fresh asparagus spears, trimmed, chopped
4 cups chicken broth
3/4 cup Philadelphia Cream Cheese
1/4 cup heavy cream
In a deep pot melt butter and add onion and garlic , saute until cooked.
Add broth and trimmed, chopped asparagus, let simmer until asparagus it cooked.
Remove from heat and gradually add cooked asparagus and broth to purify ( I used my Ninja Food Processor)
Pour the pureed asparagus mixture back into the deep pot.
Add cream cheese, on medium heat stir until the cheese is melted.
Add heavy cream.
Taste your soup and add salt and pepper to your liking.
Serving: 8
Yield: 3.6 net carbs
