This Cream Cheese Stuffed Chicken Breasts, how I love thee. It certainly has become a new family favorite.
Also, you must know it is very easy to prepare but looks like you slaved over a fancy looking dish. Just one look at all that crispy stuffed chicken breast oozing with cream cheese, was enough to make us all fall in love.
The nice thing with this recipe is you can bake it in the oven or summer time cook it on the BBQ
An easy everyday dinner or perfect for entertaining!
2 Chicken Breast
2 Tablespoons Cream Cheese
2 Tablespoons Bacon Crumble or 4 slices cooked bacon strips
1/2 bag Pork Rinds
For each chicken breast you could use 2 separate small dishes and mix 2 tablespoons of cream cheese and 2 tablespoons of bacon crumble together. Set aside
Pour half a bag of pork rinds in a zip lock bag and crush to make crumbs
If you have thick chicken breast, cover with plastic wrap and using a meat mallet pound the meat to approximately 1 inch thick.
Take the dish of cheese and bacon place in the center of the chicken breast and roll.
Place stuffed breast on a double layer of foil
Baste the breast with olive oil and pat pork rinds to cover the whole breast ( top, sides and bottom)
Preheat BBQ , 400F
Place foil with breast on the BBQ and cook with lid closed for approx 15 Minutes, turn over for another 10 to 15 minutes.
Remove from BBQ and serve.
