This is a must to try, I made the batch and my husband came home and ate them all up. He doesn’t eat just anything! Snack food is something we are all craving for and it is amazing what type of recipes you can find on the internet.
Now I did not follow the fat head directions to a “T” but am happy the way I have prepared them.
This recipe can be used for a pizza crust and also some people use it as a focaccia just roll your doe thicker.
1 ¾ cup shredded mozzarella cheese
2 tbls cream cheese
1 egg
½ cup almond flour
Salt to taste
½ tsp Rosemary (optional)
Preheat oven 425
Place shredded mozzarella and cream cheese in a microwavable dish. Microwave on high for 1 minute, stir until all the cheese is mixed well.
Place back into microwave on high for another 30 seconds, remove from microwave and stir until mixed well.
Add almond flour, rosemary and salt: mix well
Add egg and mix well.
On a baking sheet, place cracker mixture on parchment paper and lay a piece of parchment paper on top of mixture.
Take a rolling pin and roll out the mixture between both papers until it is very thin.
Remove top layer of paper, take a pizza cutter and score the dough.
Place in oven for approx. 5 minutes, remove and flip over and put back in oven for a couple more minutes.
Be very careful keep an eye, the crackers can burn pretty easy.
Once cooled down break crackers on the score marks.
Turn off your oven and wait until the oven has cooled down to the point it is warm.
Place the crackers back into the oven and let dry out.
I left mine in for about half an hour.
Servings: approx. 50 crackers
Yield: .2 grams
