Let’s make a batch of Low Carb Coconut Oatmeal Cookies and enter coconut bliss. I remember again going to Granma’s house and the smell of coconut floating in the air, running to the table taking my seat waiting impatiently to devour those Coconut Oatmeal Cookies. Nummies!
2 cups of Oatmeal
2/3 cup unsweetened Coconut
1 cup butter
¾ cup xylitol (sweetener)
2 eggs
3 tbsp almond breeze
1 ½ tsps. Vanilla
1 ½ cup almond meal
3 tbsp coconut flour
½ tsp baking soda
½ tsp salt
Cream butter and xylitol, add eggs, milk and vanilla, beating well. Add dry ingredients to creamed mixture, Blend well. Measure 1 tablespoon for each cookie; roll in a ball, press down with a wet fork.
Bake 400 for 12 minutes, makes 5 dozen.
Yeild: 1.7 net carbs per cookie
