This crust holds layers of creamy coconut, chocolate and a pecan mixture in these luscious baked squares. You have to be careful to limit the amount you eat, they are very addictive.
So lets get started and I will show you how to make them!
Before we get to the recipe I would like to introduce my new Grand Daughter: Rylie Grace 7.7 lbs. Another joy in our lives.
Here is the recipe you have been waiting for!
Crust
1 egg
1 cup almond flour
1/4 teaspoon salt
2 tablespoons melted butter
Filling
1/2 cup 35% cream
1/2 cup erythritol
1/2 cup unsalted butter
1 teaspoon vanilla extract
9 ounces sugar free chocolate chips or 9 ounces 85% or more cacao unsweetened chocolate bars
1 cup chopped pecans
1 cup unsweetened shredded coconut
Crust
In a bowl add beaten egg, salt, melted butter, mix well
In a glass ovenware dish press the dough on the bottom of dish. I like using parchment paper
to press down the dough evenly.
Preheat oven 350 and back on middle rack for 20 minutes or until the edges are golden brown
Filling
In a sauce pan add cream, erythritol, butter, vanilla, boil for 5 minutes.
Once it has boiled for 5 minutes turn off the burner and add in the chocolate, chopped pecans and coconut.
Stir and mix well.
Pour the chocolate mixture over the cooled crust and shake the dish to level the chocolate.
Keep in the fridge.
