This Low Carb Chocolate Fudge only needs 6 ingredients and a 15 minute prep and making low carb fudge is super easy.

8 tablespoons coconut oil
8 oz cream cheese
1/2 cup of granular or powdered erythritol
1/2 cup cocoa powder
pinch of salt
1/4 cup unsweetened coconut flakes
In a pot, melt the coconut oil, add the cream cheese ( I recommend to break up the cream cheese into pieces)
Add the erythritol , cocoa powder and salt, stir constantly until everything is melted and mixed well.
Using an electric mixer beat the fudge until smooth and well mixed.
Take an 8 x 8 dish, place parchment paper on the bottom.
Pour the mixer into the dish, spread it out evenly.
Sprinkle coconut flakes over the top of the fudge
Refrigerate overnight, cut into squares.
Keep refrigerated.
