This is delicious, melt in your mouth dairy free coconut chocolate fudge made with coconut oil and coconut milk. This low carb chocolate fudge makes a tasty snack for us low carbers graving for sweetness. These are a household favorite that I love to hand out – they’re a delicious indulgence, and so very good for you! It is more like a chocolate bar but who cares along as we have Chocolate and something sweet.
(You can substitute other sweeteners if you would like!)
Ingredients
1/2 cup unsweetened cocoa powder
1/2 cup coconut oil, softened (melting works better)
1/3 cup unsweetened coconut flakes
1/4 cup coconut milk
1/4 cup Xylitol or Erythritol, powdered
1 teaspoon sugar free vanilla extract
Instructions
1. Combine all ingredients in food processor.
2. Process until all ingredients has been blended well.
3. Line square dish 8 1/4 x 8 1/4 with parchment paper and spread mixture evenly
4. Refrigerate until fudge is hardened.
5. Remove fudge from container and cut into squares.
Now in the video I forgot the sugar free vanilla extract so I removed it from the fridge and microwaved it to softened and put it back in the mixing bowl and added the vanilla. So I found I need to melt the mixture and then it is easier to put in the dish.
It turned out fabulous and I think you will enjoy it.
