This Low Carb Chocolate Chia Pudding seemed to be my staple to help me lose my almost 21 pounds. It is so healthy, I have been eating it for breakfast everyday.
This is the beauty of chia pudding, once you have the chia seed-to-liquid ratio right, the flavor possibilities are endless.
It will leave you feeling satisfied, satiated and so energized for your day!
I love this snack, it is easy to make, throw it in the fridge and it ready when you are!
So lets get started and I will show you how to make it!
1 1/2 cup of Coconut Unsweetened Beverage ( I used SILK Brand)
1/3 cup Whey Protien Concentrate Vanilla (Leanfit Natural) use any brand you like
4 tablespoon chia seeds
2 tablespoon unsweetened cocoa powder
1 tablespoon + 1 teaspoon powdered erythritol or (monk fruit, xylitol or swerve)
1/8 teaspoon 100% powdered stevia
I made 2 batches of this pudding because I can’t seem to stay away from it. This way it will give me 4 bowls and I’m not making it so often.
Add all the ingredients in a mixing bowl, coconut beverage, protein whey,chia seeds, cocoa, sweetener. Whisk until you the ingredients are slightly mixed. ( the reason is so the cocoa powder and other powders don’t fly all over the place).
Get your electric mixer and mix the pudding thoroughly.
Divide into bowls.
Refrigerate for a view hours or over night so it thickens up.
Ready to serve!
