Enjoy this Low Carb Chocolate Cake with Cream Cheese Icing. It is moist and chocolaty!
CAKE
2 3/4 cup almond flour
1/2 cup coconut flour sifted
3/4 sweetener
1/2 cup cocoa powder
1 1/2 tsp baking powder
1/8 teaspoon salt
4 eggs
1 cup mayonnaise
1/2 cup water
1/4 oil
1 teaspoon vanilla
Mix all dry ingredient in bowl
In a separate bowl mix all wet ingredients except water
Add dry ingredients in to wet ingredient, mix with electric mixer.
Add in the water gradually until you are happy with the consistency. If
you need to add more water please do.
Using a loaf pan grease with butter or oil and add some parchment paper.
Preheat oven 350F and bake approx. 50 minutes
Remove from loaf pan and place cake on cooling rack.
ICING
4oz cream cheese
1/4 cup butter
1/2 tablespoon whipping cream
1/2 cup sweetener
1/2 tsp vanilla
Mix well!
Slice cake horizontally, spread icing on one half, add second layer on top and
ice the top of cake.
