We are always looking for a warm soothing bowl of chicken soup. This Low Carb Chicken Soup recipe is one of my favorites and so easy to prepare. This soup gets a makeover with a taste of ginger, not your traditional flavor which is expected when we are talking chicken soup.
For the last 6 weeks I have worked very hard to lose my extra weight and this Low Carb Chicken Soup was one of my life savers through the weight loss process. I made the soup in individual servings so I knew the carb count and the calorie count. Yes, I did count calories also because eating low carb can be very high in calories and I was determined to get this extra 15 pounds off. This low carb chicken soup has an amazing flavor with the touch of ginger a little kick of pepper. Hmmmm! I love it. I just put them in individual bowls in the fridge and when I was ready to eat the soup it was ready to go.
4 ounces cooked chicken
slice of chopped onion ( approx 1/4 inch slice from a medium onion)
1 stock chopped celery
1 cup chicken broth
1 clove minced garlic
1/4 teaspoon ginger (fresh or powder)
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup mixed greens
Combine 4 ounces chopped cooked chicken, chopped onion and 1 stalk of chopped celery with 1 cup of chicken broth.
Season with 1 clove of minced garlic, 1/4 teaspoon of fresh ginger or powdered ginger and salt and pepper.
Cook together until celery is soft approx 30 minutes.
You may add other seasonings such as basil or oregano.
Serving: 1
Yield: 4.5 net carbs
