This Low Carb Chicken with Mushroom Roasted Pepper Alfredo Sauce is a dish you will not forget. My Goodness it is so delish! Its funny I am not crazy about different sauces but man this one is soooooo good.

I wanted to eat the whole think in one sitting. But the calorie count is quite high for one serving and I do still keep track of the calories with the carbs For me to keep my weight stable I should stay at 1500 calories a day and can eat approx 150 carbs a day. I like this recipe with a side salad or you could make some zoodles as your pasta and you are all set.

1 1/2 pounds Chicken Breast
Sprinkle of Herbamare
3 Tablespoons Butter
1/2 cup chicken broth
1 chopped shallot
3 minced garlic
1/4 tsp dried thyme
Sprinkle of sea salt and pepper
6 oz chopped mushrooms
1 1/2 cup table cream 18%
1 cup Parmesan cheese
10 oz roasted red peppers
Cut chicken breasts in to strips, melt butter in skillet add chicken strips, brown on both sides and remove from pan.
Do not clean the skillet, Add chicken broth, stir.
Add shopped shallot, garlic, thyme, salt, pepper, mushrooms, cook until onion and mushrooms are cooked through
Stir in table cream, parmesan cheese and let thicken.
Chop the red peppers into 1 inch pieces and add to the mixture in skillet
Return chicken into the sauce mixture and simmer until chicken is cooked and sauce has thickened.
Servings: 4
Yield: 9.4 net carbs
