This scrumptious one pot meal Low Carb Chicken Curry with Sweet Potato, will leave everyone cozy and happy.
The recipe requires about 10-15 minutes of chopping but after that, it comes together rather quickly.
To elevate your chicken curry with sweet potato, serve the mixture over steamed cauliflower rice it is so tasty.
This chicken sweet potato curry is dairy-free as we use coconut milk instead of cream, making this recipe paleo friendly and healthier than other versions.
So lets get started and I will show you how to make it!
1 medium onion finely chopped 115 grams
1 small sweet potato diced (200 grams)
2 tablespoon butter
1 tablespoon curry powder
1 (398 ml) can Coconut Milk
1 cup chicken broth
1/2 teaspoon herbamare
1 rotisserie chicken ( I buy mine from Costco)
2 tablespoon of Yacon Syrup
1 tablespoon minced garlic
1/2 teaspoon lime juice
Heat up a skillet and melt the butter, add onion and sweet potato.
Cook until the onion are clear.
Add in the garlic, stir cook for approximately 5 more minutes
Add the curry powder, stir
Add in the chicken broth and coconut milk, herbamare and yacon sryup, stir.
Let simmer until the sweet potato is cooked through.
Add the cooked chicken, stir well add lime juice and get ready to serve.
Optional
Melt butter in a skillet add cauliflower rice, sprinkle with herbamare cook until rice is tender.
