Well I was staying at my daughters for the week to help her with the birth of her daughter. Yes I am a Grandma for the second time and truly enjoying every minute of it. So I had to find where everything was in her kitchen so I could put this recipe together for you. This is the first time I’ve experienced using a gas stove and quite liked cooking with it.
I did a lot of cooking during the week and one evening I served a shoulder ham and had some left over, so I thought a Low Carb Chicken Cordon Bleu Casserole was in order.
My kids were very impressed with there meal that night and so was I. I don’t think you will regret giving this Low Carb Chicken Cordon Bleu Casserole a try.
Lets get started
3 tablespoons butter (salted)
1 lb cubed chicken breast
sprinkle herbamare
2 bunches of small broccoli florets
1/2 cup chopped onions
3 oz sliced mushrooms
1 1/4 cup heavy cream
1/2 cup Parmesan cheese
1/2 cup sour cream
1 teaspoon basil
salt and pepper
1 lb cooked ham
1/2 cup Parmesan cheese for topping
150 grams sliced Swiss cheese
8 x 8 or 9 x 9 oven ware dish
Preheat oven 325 F for 25 minutes
In a skillet melt butter, sprinkle herbamare on the chicken,brown chicken ,add onions, mushrooms, cook until onion and mushrooms are cooked. Set aside
In a pot steam the broccoli till tender. Set aside
In a saucepan; add cream, Parmesan cheese, sour cream, 3 slices Swiss cheese (1.5 oz), basil , salt and pepper to taste. Cook for approximately 10 minute.
Pour sauce over chicken, add leftover ham, broccoli and mix well.
Pour into a 8×8 or 9×9 ovenware dish, place 4 slices of Swiss cheese to cover the entire mixture.
Cover the Swiss cheese with 1/2 cup of Parmesan cheese.
Place in middle rack in the oven, bake for 25 to 30 minutes or until topping is golden in color.
Remove from oven and let sit for 10 minutes before serving
