Everyone loves chicken, bacon, tomato sandwiches with mayonnaise; well let’s make it into a low carb appetizer great for anytime of the year. I served them to my sorority sisters the other night and they were a great hit, we all love bacon.
1lb Schneider’s Bacon
Mayonnaise (Hellmann’s)
Chicken Breast
Herbamare Spice (any seasoning)
Cherry Tomatoes
Cover cookie sheet with parchment paper, cut bacon strips in half, arrange on cookie sheet. Bake in oven at 400 F for approximately 25 minutes. (Not completely cooked) While bacon is cooking, add water to a frying pan take a large boneless chicken breast, sprinkle Herbamare spice on chicken, cover and cook.
Prepare
Cut chicken breast into small pieces
Spread mayonnaise on bacon; add a piece of chicken and half a cherry tomato, sprinkle with Herbamare spice. Wrap, hold with a toothpick.
Preheat oven 350F place on middle rack cook for 10 minutes. Enjoy!
