Who says you can’t have Chinese when you are on a Low Carb Diet. Well here is a Low Carb Chicken Chow Mein recipe that you will eat over and over again. You have healthy zucchini zoodles, bean sprouts, carrots, mushrooms and chicken with a special sauce and spices. You can’t go wrong!
1 1/2 lb. boneless chicken breasts, thinly sliced
herbamare
2 Tbsp. avocado oil
2 tsp. grated ginger
3 cloves garlic, minced
1 Tbsp. soy sauce
2 Tbsp. avocado oil
12 cup sliced onion
1/2 cup slivered carrots
3/4 cup sliced mushrooms
2 zucchini (about 1 pound), spiraled as noodles
2 cups bean sprouts
Salt and pepper to taste
Sauce
2 Tbsp. low-sodium soy sauce or coconut aminos
2 Tbsp. oyster sauce
1 Tbsp. rice wine vinegar
1 Tbsp. erythritol or substitute sweetener
Directions:
Sprinkle the chicken with herbamare, cook in skillet over medium-high heat. Set aside.
Do not clean the skillet, add the oil, onion, carrots, and mushrooms, cover with a lid and cook until tender. Then toss in the zucchini noodles and bean sprouts.
In a small bowl, whisk soy sauce, oyster sauce rice vinegar and erythritol. Pour this over the veggies and chicken Toss all together and serve.
