Folks tend to hang around the appetizer tray whenever I serve these party bites. These make for a pretty presentation on a buffet table.
5 medium zucchini ( six inches long)
4 ounces blue cheese, crumbled
3 tbls. grated Parmesan cheese
1 tsp dried basil
1/8 tsp pepper
1 pint cherry tomatoes, thinly sliced
Yield: 35 appetizers

1 medium zucchini
1 ounce of blue cheese, crumbled
1 tbls. Grated Parmesan cheese
Pinch of basil
Pinch of pepper
Cherry tomatoes thinly sliced
Cut zucchini into ¾ inch slices. Using a melon baller or small spoon, scoop out the insides and discard, leaving the bottom intact.
Place zucchini on a baking sheet, spoon ½ teaspoon blue cheese into each.
Combine parmesan, basil and pepper; sprinkle half over blue cheese.
Top each with tomato slice, sprinkle remaining parmesan mixture on top of tomato.
Bake at 400 F for approximately 10 minutes or until cheese is melted.
Serve warm
