This Low Carb Cheesy Sausage Soup is packed full of all my favorite foods, cheese, sausage, diced tomatoes , mushrooms, chicken broth and onions. Here, in this part of the world we have the privilege of having snowy cold weather (NOT!) but is the best time to sit down with a nice hot bowl of soup. It is SO good! that you want to go back for more. It is even better the next day.
So lets get started and I will show you how to make it!
1 lb Italian Sausage
1/2 tsp herbamare
4 cloves minced garlic
227 g mushrooms (3 cups)
2 medium size chopped onion (2 cups)
4 cup chicken broth
1 1/2 cup marinara sauce
1 can diced tomatoes (796 mls)
1 teaspoon oregano
1/4 cup grated Parmesan cheese (25 grams)
1 cup mozzarella cheese (125 grams)
3/4 cup fresh spinach (200 grams)
Cut the sausage skin, peel back and remove the meat from the sausage.
Place sausage in a pot and simmer until cooked, add the herbamare, garlic, onion, mushrooms, chicken broth , marinara sauce, diced tomatoes and oregano.
Simmer until the mushrooms are cooked, then add in the Parmesan and mozzarella cheese.
Cook until cheese all melted
