Everybody seems to love hash brown casserole, and there are many different hash brown casserole recipes around, but to be able to make it low carb and that no one would ever know that it is made out of cauliflower. You can use regular bacon, but the crumble bacon makes this dish amazing!!!
Mushroom Sauce
8 small mushrooms, chopped, 3 ounces
1 stalk celery, chopped
2 tablespoons onion, chopped, about 1 ounce
2 tablespoons butter
1/2 cup chicken broth
3/4 cup heavy cream
Salt and pepper, to taste
Put all the mushroom sauce ingredients in a pot, when it starts to boil turn the heat down to low. Cook until the sauce has thickened.
Hash Brown Ingredient
1 head of cauliflower
1 c. Finely chopped onion
1 c. Grated cheddar cheese
2 Tbls. Butter
1/4 tsp. pepper
2 tsp. Paprika
1/2 cup. sour cream
1 cup bacon crumble
Preheat oven to 350F
Cut up the cauliflower into small pieces, steam them in a steamer or use a pot of water and a colander and steam the florets.
In a mixing bowl add mushroom sauce, add all of the Hash Brown Ingredients and mix well.
Pour into a Pyrex ovenware dish; grate some cheese on the top.
Place in oven and bake for 25 to 30 minutes.
