You would never catch me eating Brussel sprouts in my younger years, but now I can’t get enough of them. I absolutely love them smothered in butter and some salt. But to change it up I have a great recipe, my Low Carb Cheesy Bacon Brussel Sprouts they are so simple and fast to prepare, and you will love them.
1 pound of Brussel Sprouts
1 ¼ cup of cheddar cheese
2 slices of bacon
Dash of cayenne
Bring about an inch of water to a boil in the bottom of a pot into which your steamer basket or insert fits. Put trimmed and cleaned Brussel Sprouts in the steamer basket, set over the boiling water, cover, and steam until tender to the bite, about 25 minutes.
I used an electric steamer and it works very well.
Arrange sprouts in a shallow oven proof dish. Sprinkle with cheese, bacon pieces and a little cayenne pepper.
Place dish on bottom rack, under a pre heated grill and cook until bacon is crisp and cheese is bubbling and brown.
Ready to serve!
