What is Cha Cha White Chicken Chili? I never heard of it until one of my daughters came home and said her girlfriend had made it for supper when she was over for a visit. I looked it up on the internet to find out where it came from and I could not find any answers so I looked it up and used the recipe from allrecipes.com and converted into a Low Carb Cha Cha White Chicken Chili.
I thought white beans kind of have the texture of cooked cauliflower so let’s make a Low Carb Cha Cha White Chicken Chili with Cauliflower, and is it good or what? The carb count has lowered drastically and we have a chili that you don’t have to feel guilty about eating. I question as it being chili, it looks more like soup but it has a nice flavor in fact it’s even better the next day.
I cut back on the peppers because my husband does not like it so hot that his mouth is on fire so I will give both options, hot and milder.
So let’s get started!
1 medium onion chopped
1 Tbls olive oil
3 garlic cloves crushed
2 4oz can green chili peppers
2 tsp. ground cumin
1 tsp. dried oregano
½ tsp. cayenne pepper
3 cups cooked chopped chicken
4 cups chicken broth
1 large head of cauliflower
2 cups of cheddar cheese (your choice)
(Option) To give it some heat add 1 (4 ounce) can diced jalapeno peppers
Sauté onions in oil till transparent, add garlic, chili, cumin, oregano and cayenne pepper and cook for 3 minutes.
Add chicken, broth and small pieces of cauliflower, cook for approximately 15 minutes, stirring occasionally.
Remove from burner, stir in cheese.
Serve in soup bowls, garnish with a sprinkle of cheese.
