Low Carb Cabbage Rolls are a hearty dish traditionally made from ground meat, cabbage leaves, and tomato sauce, and they can be cooked in the oven, on the stove, or in the slow cooker. I’ve always enjoyed cabbage rolls but didn’t make them since most methods were too complicated. This recipe is fairly simple and results in the best Low cabbage rolls.
Tip: Tomato Sauce can be used for spaghetti sauce, guaranteed there will be some left over.
Small Cabbage
2lbs Lean Ground Beef
1 cup white onion
1 Tbsp Herbamare Spice
11 half slices of Bacon (Schneiders Country Naturals)
Tomato Sauce
28 fl/oz Primo Whole Plum Tomatoes
5.5 fl/oz Hunts Tomato Paste
1 Tbsp Stevia
2 Tbsp White Vinegar
1 Tbsp Oregano
1 Tbsp Garlic Powder or Salt
1 cup Water
Tomato Sauce
Add all ingredients for the tomato sauce into a food processor mix together and set aside.
Cabbage Rolls
Working from the core cut the leaf at the stem (bottom of Cabbage) to separate leaf from the stem and find the end of the leaf, roll back each leaf as shown in the video.
If you would like you can cut out the core, put the whole cabbage in boiling salt water for 5 minutes, remove from water, cool down and peel off each leaf.
I do not boil my cabbage so I can use the left overs for a salad or other uses. Set cabbage leaves aside.
With 2 lbs. of lean ground beef in a bowl, mix in onions and herbamare, wrap ½ slice of bacon around approximately 1/4 cup of meat mixture, place even amounts of filling on each cabbage leaf. If you cut away a portion of the center vein, place the filling just above the removed portion.
• Roll the leaf around the filling tucking in the sides while you are rolling
• Add a toothpick to secure the cabbage roll.
Line cabbage rolls in the bottom of a roasting pan, pour tomato sauce over rolls, cover.
Preheat oven 350 for 45 to 1 ½ hours until cabbage is soft. If you do not remove the portion of the center vein it might stay crunchier compared the rest of the cabbage roll.
