Chicken, Chicken, Chicken! What can I do with leftover Chicken? Try this Low Carb Cabbage, Chicken Casserole. It is easy and delicious!!
5 cups (492 grams) chopped cabbage
2 cups (230 grams)cooked chicken pieces ( I used a rotisserie chicken)
2 eggs
1 cup Hellman’s mayonnaise
1/2 cup 35% whipping cream
1 cup (120 grams) shredded cheese ( I used marble cheese, you can use any kind you wish)
1 tablespoon minced garlic
1 teaspoon herbamare
1/4 teaspoon oregano
1 cup (100 grams) chopped red pepper
1 cup ( 114 grams) bacon crumble
3 slices cooked bacon
Chop cabbage, place in a bowl with a small amount of water in the bottom sprinkle with herbamare. Cover with plastic wrap and microwave for 5 minutes.
In a separate bowl add eggs, mayonnaise, cream 1/2 cup shred cheese, garlic, oregano, red pepper and mix well.
Using a 8 x 8 ovenware dish add cooked cabbage to the bottom of dish.
Next layer add the chunks of chicken
Next layer add the bacon crumble and cut bacon
Pour the egg mixture over top of the ingredients in the dish
Sprinkle the 1/2 cup of shredded cheese on top.
Preheat oven: 350 and bake for 40 minutes.
Let sit for 5 minutes before serving.
