This is another great meal. This Low Carb Butternut Squash Pizza Casserole is amazing and so healthy for you. The nice thing with this recipe you can use sweet potatoes or even zucchini in place of the butternut squash. Even though the squash is made into noodles the squash does not look like noodles when baked.
In most of the original pizza casserole recipes you will find different types of pasta’s which are not as healthy as our choices. When you are choosing your sausage try and choose nitrate free, no preservatives and no carbs.
This recipe is a winner in my books.
2 teaspoon olive oil
1 teaspoon minced garlic
1 onion 85 grams
1 bell pepper 77 grams
1 pound sausage
2.25 oz olives
4 tomatoes 285 g
30 slices pepperoni
375 g Small Butternut Squash
1 cup shredded marble cheese
Peel the squash, thinly slice or use a spriralizer to make noodles, place in a ovenware dish sprinkle with herbamare or salt and pepper.
In a skillet add oil, garlic and onion, cook till translucent, add peppers, sausage using your spoon break up sausage into small pieces.
Stir in tomatoes, olives, pepperoni cook for another few minutes.
Pour the meat mixture over the butternut squash, sprinkle with cheese, cover with foil or lid.
Preheat oven to 425F
Bake for 25 minutes
