I had bought a large shoulder ham and thoroughly enjoyed it for a couple of meals but that was enough for me.
I am always looking for a recipe to use my left over ham and the combination of broccoli and ham is right down my alley.
You could have this Low Carb Broccoli and Ham Soup at your table in 30 minutes, a simple broccoli soup recipe that is healthy as is delicious and makes a perfect starter for any dinner party.
3 cups chicken broth
1/4 of a head of cauliflower
1 teaspoon salt
2 bunches broccoli heads
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
3 cups almond breeze
1 1/2 cup cooked ham
1 cup half and half cream
2 cups shredded Swiss cheese or 150 grams package of sliced Swiss cheese
In a pot add broth, pieces of cauliflower and salt. Cook until the cauliflower is well done.
Add cauliflower and broth in a food processor and blend until smooth, no lumps.
Return the liquid back into the pot, add broccoli, garlic, pepper, almond breeze, half and half, ham and cheese, cook till broccoli is tender. (approximately 20 minutes)
