Christmas is just around the corner, Football is in action, and we are always looking for treats to serve.
Here is a great appetizer made from Family Friendly Fat Burning Meals, Diana Keuillians Low Carb Breaded Zucchini Sticks.
They are so so good you will not regret serving these.
I love them with my Garlic Dip.
• 3 zucchini
• 1 Tablespoon salt
• 2 Tablespoons coconut flour
• ¼ teaspoon garlic powder
• 2 eggs
• ¼ cup coconut milk, canned, full fat
• ½ cup blanched almond flour
• ½ cup flax meal
• ⅓ cup nutritional yeast
• 1 Tablespoon dried oregano
INSTRUCTIONS
1. Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.
2. Cut each zucchini in half, horizontally, and then make 2 cuts in each direction to create 9 sticks. Place the zucchini sticks in a colander and sprinkle with the salt. Allow to drain for 1 hour.
3. Once you see beads of liquid on the zucchini. Rinse with cold water. Pat zucchini sticks dry.
4. In a shallow bowl combine the coconut flour and garlic powder.
5. In another shallow bowl combine eggs and coconut milk.
6. Combine the blanched almond flour, flax meal, nutritional yeast and dried oregano in a third shallow bowl.
7. Transfer 1 Tablespoon of the egg mixture into the coconut flour mixture. Mix the coconut flour mixture well to create a paste.
8. Rub the zucchini sticks in the coconut flour paste. Dip in the egg mixture. Sprinkle with the nutritional yeast mixture.
9. Place on the prepared baking sheet. Bake for 12 minutes, flip, and bake for another 12 minutes. Turn the high broil on for a minute or two to brown. Remove from the oven and serve with my Garlic Dip.
