Low Carb Mashed Cauliflower is Better than mashed potatoes, we don’t even eat potatoes anymore. You can treat Mashed Cauliflower the same as potatoes. Sometimes I find the less you do to you food the better it tastes. You can add gravy on top or anything you like.
Cauliflower is an excellent source of vitamin C, vitamin K. It is a very good source of vitamin B5, potassium, dietary fiber, manganese. Additionally, it is a good source of protein, phosphorus, vitamin B1, vitamin B2, vitamin B3, and iron.

1 Medium head of Cauliflower
1 tps Herbamare Zesty Spice (more if you would like)
¼ cup butter
Steam cauliflower in steamer or use a steamer basket in a pot with inch of water, cover. Steam for approximately 12-15 minutes.
Remove from steamer, break up florets and place in food processor, add spice, butter and purify till smooth.
If you would like you can add unsweetened Almond Breeze it is very low in carbs and helps purify the cauliflower.
