I would say that these Low Carb Best Crackers are one of my best crackers yet. By just using 4 ingredients you can really get a great cracker. I have tried many spices with this recipe and I found the Cajun spice was my favorite, mind you other spices are great as well but the Cajun is my favorite!
So lets get started and I will show you how to make them!
1 1/2 cup (144 grams) almond flour
3/4 cup (67.4 grams)Parmesan cheese
1 1/2 teaspoon Cajun spice (Clubhouse)
1 egg
Preheat oven 350 F
Remove the oven rack from the oven before you preheat the oven.
Add almond flour, Parmesan cheese and Cajun spice to a bowl and mix well.
Add in a well beaten egg to the dry mixture.I wear a glove, mix the ingredients until it becomes a dough.
Place the dough onto a silicone mat or parchment paper and then using silicone mat or parchment paper lay on top of dough. With a rolling pin, roll out the dough until it is very thin.
Remove the top mat and using a pizza cutter or knife, score the dough into squares.
Slide the mat onto the oven rack and return into oven on the middle rack.
Bake on middle rack for 5 minutes or until the edges of the crackers are turning light brown.
Remove from oven and place the crackers on a metal baking sheet.
Turn the oven off.
Let the oven cool down for approx 5 minutes and place the crackers back into the oven, leave them there to dry. Check to see if the crackers have crisped up. ( it could take an hour or 3 hours, just be patient, they will turn out perfect)
Store in a sealed container , keep in the refrigerator! They will last a long time in the fridge.
Serving: 120 crackers
Yield: My nutritional Factor does not cover 120 crackers so I calculated it with 60 crackers and then doubled it.
