I know as of late I have been sharing numerous recipes for chicken, if you are like our family we eat a lot of chicken and would like a variety. Well here is one of my favorites, Low Carb Barbecue Chicken in a Pot. This is a very simple recipe which takes know time at all to put together.
8 pieces of chicken (legs, thighs or breasts your choice)
Barbecue Sauce
1 cup water
½ cup apple cider vinegar
1/2 cup Heinz Reduced Sugar Ketchup
1 tsp. mustard
1/3 cup xylitol
1 tsp. liquid smoke hickory
1 ½ tsp. salt
½ tsp onion powder
¼ tsp. garlic
¼ tsp. paprika
In a mixing bowl mix all ingredients together.
In a large pot place chicken pieces in bottom of pot, pour sauce over top of chicken pieces.
Place lid on until the sauce starts to boil with chicken. Remove lid and turn heat down to medium and let simmer for approximately 2 to 2½ hours or until sauce thickens.
You will find there is not a lot of sauce left and a bit of grease from the chicken, remove from pot and serve.
Yield: 1 carb per piece of chicken.
