Who would think of combining blueberries with pork?
This Low Carb Bacon Wrapped Pork Tenderloin Medallions with Blueberry Sauce are tempting morsels of pork wrapped in bacon in this elegant dish. A tasty and healthy meal that can be prepared in 25 minutes.
When I prepared this recipe I was not happy with the bacon I picked, it didn’t look as nice as I wanted it to when I wrapped the bacon around the pork medallions, but the flavor was amazing. So if you want them to look perfect be very choosy on the bacon you purchase.

1 pound pork tenderloin
1 pound bacon
1 tablespoon Herbamare or any rub you like
Blueberry Sauce
1/2 tablespoon olive oil
2 tablespoons chopped onion (30ml)
1 cup blueberries
Dash of salt and pepper
1 tablespoon apple cider vinegar
Dash of Thyme
1/4 teaspoon honey
Meat Instructions
Cook bacon enough that you can use them as a wrap.
Sprinkle herbamare on pork loin, slice into medallions (10)
Wrap a slice of bacon around each medallion and hold together with a toothpick
Using the bacon grease cook the bacon wrapped medallion, turning until cooked through.
Remove toothpicks
Sauce Instructions
In a sauce pan heat oil, add onion saute until cooked, add blueberries, salt,pepper,vinegar, thyme and honey.
Cook until the sauce thickens. It takes approx 25 minutes
Pour blueberry sauce over pork tenderloin medallions and enjoy.
