2 pounds ground beef (907.18 grams)
*1/2 cup blanched finely ground almond flour*(48 grams)
1 yellow medium onion (110 grams)
½ cup heavy whipping cream (120 grams)
1/4 cup Heinz No Sugar Added Ketchup (117 grams)
1 egg, beaten
1 tablespoon dried basil
*1 teaspoon herbamare* or 1 teaspoon salt
½ teaspoon ground black pepper
1 tablespoon minced garlic
6 slices bacon
Preheat the oven to 400°F (200°C)
Chop the onion into small pieces
Mix the ground meat, onion and all the other ingredients, except the bacon in a bowl.
Using a loaf pan place saran wrap on the bottom and up the sides so the wrap is hanging over the edges.
Line the bacon strips on the plastic, side by side to fill the bottom of the loaf pan and over the edges.
Place the meat mixture over the bacon strips and press lightly and then fold the bacon on the top of the mixture
Turn the loaf pan upside down onto a glass Pyrex dish or baking sheet.
Bake in the middle rack of the oven for about 50 minutes to an hour.
If the bacon doesn’t appear to be completely done, broil the meatloaf for until the bacon is crispy.
