1 ripe avocado
4 slices of bacon
2 eggs
Salt and pepper
Preheat oven 400F, place parchment paper on cookie sheet organize bacon and bake for 15 minutes.
Cut avocado in half, separate and remove the pit. Using a knife, slice a piece of the avocado from the bottom so the avocado will sit flat, remove the peeling.
Using a oven ware dish place parchment paper on the bottom, wrap 2 bacon strips around the edge of the avocado, crack an egg and place in the hole of the avocado, sprinkle salt and pepper.
Turn oven down to 375F bake for 12 – 17 minutes, remove from dish and serve.
