This is going to be one of my go to dressings for now on, I just love it. I served it to my husband and I always know it is a hit when he says “oh, that’s nice” I laugh with a big smile when he says this, because I know it is a hit.
It is a delicious way to spice up you next lunch.
This Low Carb Avocado Ranch Chicken Salad features layers of leafy greens, onions, crumbled bacon, avocado and all dressed in a avocado ranch dressing. It is scrumptious and is sure to be the hit of your next party or picnic.
1/4 cup ripe avocado ( 1/2 avocado)
1/4 cup mayo
1/4 cup sour cream
1 tablespoon almond milk
1 1/2 teaspoon white vinegar
1/8 teaspoon sea salt
1/8 teaspoon dried parsley
1 pinch dill
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1 teaspoon lemon juice
Dressing
Peel and pit avocado, using 1/2 avocado mash with a fork
Combine all the ingredients and mix well
Refrigerate until ready to serve.
Salad
Mixed greens (Spring Mix is what I used)
1/4 sliced small read onion
3 chicken breasts
2 1/2 avocado’s
6 tablespoons bacon crumble ( or 6 slices cooked bacon cut into pieces)
Directions
Take a hand full of mixed greens on your plate, add your onion slices, 1 full chicken breast pieces, 2 tablespoons of bacon crumble or 2 slices of bacon.
Drizzle avocado dressing on your salad and enjoy!
