This low carb bacon & cheese soup was taken from the Atkins Diet. My husband really like this soup but I was not as fond of it. If you like bacon and cheese you must try it for yourself. In the recipe it states to add 4 teaspoons of Thick It Up,(which is a thickener with no carbs). If you don’t have Thick It Up I suggest you try using Pure Guar as a thickener, you can find it at the Bulk Barn and in the organic aisle in a regular grocery store. So lets get to the recipe to make this Low Carb Bacon and Cheese Soup!
Tip: I found the soup very thick, I added 2 extra cups of chicken broth.
4 pieces of thick bacon crispy
or 1 cup of bacon crumble (pizza bacon)
1 small onion (1/4 cup)
1/2 tsp mustard powder
1/4 tsp ground black pepper
2 cups chicken broth (I added 2 more cups)
4 tsp thick it up
2 cups half and half cream
12 oz cheddar cheese
1/2 tsp paprika
In the video I used bacon crumble which is pre cooked, place in large pot add onion Cook 3 minutes, until onion just begins to brown. Add mustard, pepper, and broth. Bring to a boil. Reduce heat to low.
Whisk in thickener. Add half-and-half, cheese, and paprika; stir until cheese is melted. Ladle soup into four heated soup bowls. Garnish with crumbled bacon.
