I love apple crisp and I am sure you do to. I wanted so badly to have a low carb version of apple crisp that actually tastes like the real thing. So I thought I would experiment with Opo Squash because it kind of has a texture of apples, and by adding the spices and sweetener you can be tricked to think it is the real thing. I found that the Opo Squash does not cook as quickly as the apple so maybe I should have cooked them in a pot separately before I put them in the baking dish with the apples. This recipe is delicious and I am sure you are really going to enjoy it.

2 small sliced apples
2 cups of sliced Opo Squash
1/3 cup of erythritol or xylitol
1 tsp of cinnamon
Topping
¾ cup rolled oats
¼ almond meal or flour
1/3 cup of Ideal Brown Sweetener
¼ cup butter
Preheat oven 375 F
Mix sliced apples , opo squash, erythritol in mixing bowl
Arrange apples and opo’s in bottom of 8 x 9 ovenware dish.
Sprinkle with cinnamon.
Topping
Combine oats, flour, butter and sweetener.
Sprinkle and pat over apples
Bake 40 minutes or until opo squash is soft.
Makes 8 servings
Yield: 10 net carbs
