Psyllium Bread Loaf by Maria Emmerich, mariamindbodyhealth.com/amazingbread/.
This bread looked so good on Maria’s site that I just had to share it with you. I was actually nervous to try and make it because I thought it might be difficult to measure and weigh everything to make this bread perfect and oh boy it looks so perfect on Maria’s site. Also I didn’t want it to difficult for you to make it.
Well it was very easy to make and I wished I had baked it a bit longer. I followed her directions,it was golden brown and I thought it was firm to the touch, so it should be done.
I baked it for 60 minutes and the ends of the loaf where perfect but the bottom of the loaf looked like it wasn’t baked enough so I think I should have bake it closer to the 75 minutes.
I also noticed that my bread was like brownish purple bread and Maria’s was white bread. If the bread turns out purple, it’s due to the psyllium husk powder. On another site they suggest to use “Now Food psyllium powder” and it will not turn a purplish color. My bread fell a little bit in the center and Maria suggests that we cut back to 3 teaspoons of baking powder. But all round I am impressed with this recipe.
I will definitely bake this bread again.
I am looking forward to try and make them into buns for a Hamburg, I have a feeling I will be very happy with it.
3 cups blanched almond flour (10 oz), or (238.5 mls)
10 T Psyllium powder or (90mls) if you use psyllium husk, put in food processor and make powder)
Maria uses “Jay Rob psyllium whole husk and powder it down”
4 tsp baking powder
1 tsp sea salt
5 T apple cider vinegar (2 oz) or (59 mls)
6 egg whites (7 oz) or (207 mls)
1 ½ cups boiling water (12 oz) or (355 mls)
Preheat 350 F
Blend: flour, psyllium, baking powder and salt
Add: whites and vinegar mix well
Add: boiling water mix well until thick dough
Bake 60 to 75 minutes, until golden brown and somewhat firm to the touch.
Makes 10 slices with Maria’s recipe but I got 12 slices with mine
Yield: Almond Flour (egg whites) = 220 calories, 14.2g fat, 8.2g protein, 20.7g carb, 16.6g fiber (57% fat, 14% protein, 35% carbs)
4 net carbs for 2 slices
My calculations are: 12 Slices
Yield: 4.7 net carbs
