Well these Low Carb Almond Ricotta Cookies are delicious!! They are soft, cake texture, lovely almond flavor and they will satisfied that sweet tooth. I know its crazy to be doing a cookie recipe in the middle of the summer but I needed something sweet so I would not get into those high carb desserts. Now my husband eats what ever is put in front of him or he is always going to the grocery store coming home with all high carb desserts. He eats all my low carb food and all his high carb foods.
So lets get started and I’ll show you how to make it!
Ingredients
1/2 cup butter
2/3 cup Erythritol
1 egg
2/3 cup ricotta cheese
2 teaspoons vanilla extract
1 teaspoon almond extract
2 cups almond flour
1 teaspoon baking powder
1/2 teaspoon baking soda
I mix together butter, sweetener, eggs, ricotta cheese, and extracts.
Add the almond flour, baking powder, and baking soda into the butter mixture.
Line the baking sheet with parchment paper.
Drop dough with a spoon on baking sheet.
Bake 15 to 18 minutes at 350 °F until lightly browned.
Let cool on rack
Store cookies in the refrigerator.
