What a great recipe Low Carb Almond-Crusted Chicken Wings! The almonds are awesome with the wings; they absorb all the spices and flavors from the wings and have some crunch when eating them. (I was scraping the almonds off the pan, did not want to waste any of them)
I did not video the Zesty Aioli in her recipe because I did not have the Wilderness Family Coconut Mayo, It had to be ordered on line and it appears that they are having difficulty with the product. I will include the recipe below so when it comes available you will be able to make it. You could try my Garlic Dip, it goes very well with the wings!
36 chicken wings
¼ Cup extra virgin olive oil
2 ½ Tbls sherry vinegar
1 tsp sea salt
½ cup chopped raw almonds
3 tsp crushed garlic
¾ tsp cayenne pepper
1 Tbls sweet paprika
1 tsp cumin
Zesty Aioli
¼ cup Wilderness Family Coconut Mayo
4 Tbls lemon juice + 2 tsp lemon zest
Mix all ingredients together to make the dip
Preheat oven 425F
Combine oil, paprika, cumin, cayenne, garlic.
Stir in vinegar and season with salt and pepper
Add wings and almonds, toss
Spread wings on an oven ware tray, roast for 25 minutes
Turn the wings over and put on broil to make them crispy.
12 serving (of 3 wings each)
Yield: 1 net carb per serving
