Bev Crabtree is one of my family followers on Youtube and was kind enough to share her Low Carb Fruit Cake with us and states it
is so good and rich that a 1/2inch serving each
piece… is very satisfying.
Bev also mentioned “I know dates are high in carbs but you’re not
eating too big of a piece at a time … and she is right, for 20 slices it works out to be 4.9 net carbs per slice. It gives that great sweetness needed in this recipe and healthy at that!
I have 1 tiny slice w/morning coffee…
And she is right, you don’t need a large piece of this rich Low Carb Fruit Cake to be satisfied. I found it very tasty and very enjoyable.
In fact, I like this cake so much, that I wouldn’t reserve it for the holidays. I make it year-round. I think it makes the perfect keto breakfast!
I think you should give it a try making one, it’s super easy to do and delicious.
Last Note: Ms. Gayle when you make my recipe… keep it wrapped in foil and in fridge… great w/cup of coffee… also it freezes well… to thaw take it out of freezer day before and put in fridge …to thaw.
So lets get started and I will show you how to make it.

2 cups walnut halves…230 grams
3/4 cup pitted chopped dates…179 grams
10 maraschino cherries cut into 4th’s
3/4 cup carbquik…102 grams
2/3 cup erythritol….84 grams
1/2 tsp Baking powder
1/2 tsp salt
2 beaten eggs
1/2 tsp Vanilla
Add all the dry ingredients into a bowl and mix well.
Mix the vanilla into the eggs and pour into dry ingredients.
Mix until everything is mixed well.
Divide into 2 mini sprayed loaf pans, pans measure 6 x 3 x 3 (your typical mini foil pans will also work)
(I sprayed my loaf pan and added parchment paper to help lift out of pan)
you can get approx. 10 slices from each loaf !
Bake 300 degrees for 1 hour….then do the toothpick test
as ovens are different
