Who would ever think that cooked red cabbage would be a great tasting vegetable to serve? Well to my surprise it is very delicious and an inviting vegetable for us low carbers. This is a very simple recipe and I hope you enjoy it.
Low Carb Cooked Red Cabbage
½ red cabbage (5 cups)
¼ cup water
2 Tbs red wine vinegar
2 Tb butter
2 tsp brown splenda
1 tsp stevia
Handful of Bacon bits
¼ cup feta cheese
Shred ½ medium red cabbages, chop into inch size pieces. In frying pan add water, red wine vinegar, add cabbage cover. Cook on medium heat till cabbage is tender approximately 15 minutes. Uncover, stir in butter, splenda, stevia, bacon bits and feta cheese. Cook for another 5 minutes place in serving dish add feta cheese and serve.
Yield: 1 cup serving 4.8 net carbs
